Easy no-stir risotto

Risotto recipes always call to add the stock slowly whilst stirring the whole time. This is fine, if you have nothing else to do. Bu I often have building work, houswork, babysitting and so forth. So tonight I just tried a "no stir" version and it worked fine.

Fenugreek and pea curry

This is my vegan version of the delicious north Indian curry Methi Matar Malai. It utilises fenugreek leaves, which are a bit spinach-like in texture but have a very unique taste, and also peas. The original version is very rich and creamy and also has quite a bit of sugar; this version uses no cream, but also no sugar. Pretty healthy for north Indian food!

Creamy Tomato Pasta

This is a quick, creamy and rich tomato pasta sauce. It really is so decadent tasting that it's hard to believe there's so little fat in it. I like this sauce with spaghetti, but it could be served with short pasta or even in a pasta-bake. This is a great warm, filling winter food.
